My brine recipe is:

 

  • 1/3 cup brown sugar
  • 1/4 cup kosher salt
  • 2 cups soy sauce 
  • 1 cup cold water
  • 1/2 tsp onion powder 
  • 1 tsp minced garlic
  • 1/2 tsp pepper
  • 1 cup orange juice 
  • 1 tbsp lime juice

 

Brine 24 hours. Rinse well and sprinkle with lemon pepper. Smoke for two hours with Alder wood at 165 F and then leave in to dry as much as you like.
